3-Ingredient Samoa Cookies

  • 10 dates (pitted and soaked)

  • 1 cup toasted coconut flakes

  • Melted dark chocolate gems

Instructions

  • Soak dates in warm water for a few minutes to soften.

  • Blend in a food processor until smooth (add a splash of water if needed).

  • Stir in toasted coconut flakes.

  • Roll into balls, flatten onto a lined baking sheet, and poke a hole in the center.

  • Freeze for 10–15 minutes.

  • Dip the bottoms in melted dark chocolate. Let them set—and enjoy!
