Description

Leftovers just got a glow-up with these Air Fryer Broccoli Casserole Bites. Crispy on the outside, warm and cheesy inside, they’re the perfect way to transform extra casserole into snackable bites or dippable fritters. Made for the air fryer, they’re golden, guilt-free, and totally irresistible. Think of it as the tastiest way to clean out your fridge.

Ingredients

Scale

2 cups leftover broccoli casserole (or cooked broccoli + cheese + rice mix)

½ cup shredded cheddar cheese

1 egg

½ cup breadcrumbs (plus more for coating)

¼ teaspoon garlic powder

Salt and pepper to taste

Cooking spray or oil mist

Instructions

In a bowl, mix broccoli casserole with cheese, egg, breadcrumbs, garlic powder, salt, and pepper until combined.

Scoop and shape into small balls or fritter-style patties. If mixture is too soft, add more breadcrumbs.

Optional: roll each bite in extra breadcrumbs for extra crunch.

Preheat air fryer to 375°F (190°C). Lightly spray bites with oil.

Air fry in a single layer for 8–10 minutes, flipping halfway, until golden and crispy.

Serve warm with ranch, spicy mayo, or your favorite dip.
