Description

Inspired by the beloved fall doughnut, this cozy loaf cake is packed with apple cider flavor, warm spices, and a buttery cinnamon-sugar topping. Moist, tender, and perfect with a hot drink — no fryer needed.


Ingredients

1 cup apple cider

½ cup sour cream

2 tsp vanilla extract

½ cup melted unsalted butter

2 large eggs

¾ cup brown sugar

1¼ cups + 2 tbsp flour

2 tbsp cornstarch

1¼ tsp baking powder

½ tsp baking soda

½ tsp salt

½ tsp cinnamon

¼ tsp grated nutmeg

Topping:

3 tbsp melted butter

¼ cup sugar

½ tsp cinnamon


Instructions

Reduce apple cider to ½ cup. Cool.

Mix cider, sour cream, eggs, butter, vanilla, and sugar.

Whisk dry ingredients separately, then combine all.

Pour into greased loaf pan, bake at 350°F (175°C) for 45–50 min.

Cool 10 min, brush with melted butter, and sprinkle cinnamon sugar.
