Fritter Bites:

Nonstick cooking spray

1 ½ cups all-purpose flour

2 tsp baking powder

½ tsp kosher salt

2 tsp ground cinnamon

¼ cup unsalted butter, melted

¼ cup granulated sugar

1 large egg

½ tsp vanilla extract

½ cup unsweetened applesauce

1 ½ cups finely diced Honeycrisp or Gala apples (about 2 medium)

Apple Cider Glaze:

2 cups powdered sugar

⅓ cup + 2 tbsp apple cider or apple juice


Instructions

Preheat oven to 350°F (175°C). Spray a mini muffin tin with nonstick spray.

In a bowl, whisk flour, baking powder, salt, and cinnamon.

In a separate bowl, mix melted butter, sugar, egg, vanilla, and applesauce until smooth.

Stir in dry ingredients, then fold in diced apples.

Spoon batter into muffin cups, about ¾ full each.

Bake for 12–15 minutes until golden brown and a toothpick comes out clean.

Meanwhile, whisk glaze ingredients until smooth.

Let fritters cool slightly before dipping or drizzling with glaze.
