A buttery, flaky tart filled with smooth Gruyère cheese and tender asparagus, perfect for brunch or dinner.

- 1 sheet of puff pastry
- 1 cup Gruyère cheese, shredded
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 3 large eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional: grated nutmeg
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheet to fit your tart pan and transfer it to the pan.
- Pre-bake the crust for about 10 minutes until lightly golden.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and optional nutmeg.
- Fold in asparagus pieces and half of the Gruyère cheese.
- Pour the filling into the pre-baked crust and sprinkle with the remaining Gruyère cheese.
- Bake for 25 to 30 minutes or until the custard is set and the top is golden brown.
- Let cool for about 10 minutes, then slice and serve.
Notes
For added nutrition, substitute with a whole wheat crust. Enjoy leftovers cold or warm, and consider pairing with a mixed green salad.
