Description

A buttery, flaky tart filled with smooth Gruyère cheese and tender asparagus, perfect for brunch or dinner.


Ingredients

  • 1 sheet of puff pastry
  • 1 cup Gruyère cheese, shredded
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 3 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Optional: grated nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry sheet to fit your tart pan and transfer it to the pan.
  3. Pre-bake the crust for about 10 minutes until lightly golden.
  4. In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and optional nutmeg.
  5. Fold in asparagus pieces and half of the Gruyère cheese.
  6. Pour the filling into the pre-baked crust and sprinkle with the remaining Gruyère cheese.
  7. Bake for 25 to 30 minutes or until the custard is set and the top is golden brown.
  8. Let cool for about 10 minutes, then slice and serve.

Notes

For added nutrition, substitute with a whole wheat crust. Enjoy leftovers cold or warm, and consider pairing with a mixed green salad.
