24 Medjool dates, pitted

4 oz goat cheese, softened

12 slices bacon, cut in half

Toothpicks (for securing)


Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.

Slice dates open lengthwise (don’t cut all the way through) and stuff each with a small amount of goat cheese.

Close the date around the filling and wrap with half a slice of bacon.

Secure each with a toothpick and place seam-side down on the baking sheet.

Bake for 20–25 minutes, flipping halfway, until bacon is crispy and browned.

Let cool for 5 minutes before serving.
