Ingredients

1 round Boursin cheese (any flavor you love)

1 pint cherry tomatoes (about 1.5 cups)

1/4 cup red onion, diced

2 cloves garlic, finely chopped

3 tbsp extra virgin olive oil

Salt and pepper, to taste


Instructions

Preheat oven to 400°F (200°C).

Place the Boursin cheese in the center of a small baking dish.

Surround it with cherry tomatoes, red onion, and garlic.

Drizzle everything with olive oil and season generously with salt and pepper.

Bake uncovered for 20–25 minutes, until tomatoes burst and Boursin is soft and melty.

Stir gently to combine the creamy cheese with the roasted veggies.

Serve warm with toasted baguette slices, crackers, or fresh veggies.
