Ingredients

⅔ cup balsamic vinegar

4 tbsp honey

4 tbsp olive oil

4 garlic cloves, minced

2 tsp Italian seasoning

2 tsp onion powder

2 tsp garlic powder

2 tbsp Dijon mustard

16 oz fresh mozzarella, sliced

4 cups grape tomatoes, halved

4 tbsp fresh basil, chopped

4 tbsp vegetable oil

4 lbs boneless, skinless chicken breasts, pounded evenly

Sea salt and black pepper, to taste


Instructions

Make the marinade: In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.

Marinate chicken: Pour over chicken breasts and marinate for at least 30 minutes (or overnight for max flavor).

Cook chicken: Heat vegetable oil in a pan over medium-high heat. Sear chicken on both sides until browned and cooked through (6–8 minutes per side).

Add cheese and tomatoes: In the last few minutes of cooking, top each chicken piece with mozzarella and a handful of grape tomatoes. Cover to melt.

Garnish: Sprinkle with chopped basil and serve hot or portion into containers.
