Ingredients
For the Skewers:
1½ lbs chicken breast (cut into cubes)
½ cup BBQ sauce (plus extra for brushing)
1 tbsp olive oil
Salt and pepper to taste
Wooden or metal skewers
For the Salad:
6 cups mixed greens
1 cup cherry tomatoes (halved)
1 cup corn (grilled or canned)
½ red onion (thinly sliced)
1 avocado (sliced)
½ cup shredded cheese (cheddar or Monterey Jack)
Ranch or vinaigrette dressing (optional)
Instructions
Toss chicken in BBQ sauce, olive oil, salt, and pepper. Marinate for at least 15 minutes.
Thread chicken onto skewers. Grill or bake at 400°F for 20 minutes, turning halfway. Brush with more BBQ sauce during cooking.
While chicken cooks, prep salad ingredients and arrange on a large platter or individual bowls.
Top salad with hot skewers, avocado, and cheese. Serve with your favorite dressing or enjoy as is!
