Ingredients
3 large sweet potatoes (halved or whole)
900g shredded cooked chicken breast
½ cup sugar-free BBQ sauce
½ cup plain Greek yogurt
1 tsp smoked paprika
Salt & pepper, to taste
Fresh chives, for topping
Instructions
Preheat oven to 400°F (200°C). Roast whole sweet potatoes for 40–45 minutes until soft and tender.
In a bowl, combine shredded chicken, BBQ sauce, Greek yogurt, smoked paprika, salt, and pepper. Mix well.
Once potatoes are cooked, slice them open (or halve) and fluff the insides lightly.
Stuff each with the BBQ chicken mix.
Top with fresh chopped chives and serve warm.
