- 1 ½ cups rolled oats
- 1 cup Medjool dates (pitted)
- ¼ cup almond butter (or any nut/seed butter)
- 2 tsp cinnamon
- ⅓ cup maple syrup
- ¼ cup shredded coconut (optional)
- ½ cup raisins or chocolate chips (for filling)
- 1 tablespoon vanilla extract
Instructions
- Blend the oats and Medjool dates in a high-speed blender until crumbly and sticky.
- Add the almond butter, maple syrup, cinnamon, and vanilla extract and blend until thick dough forms.
- Fold in shredded coconut and raisins or chocolate chips using a spatula.
- Shape the dough into logs on a piece of parchment paper.
- Chill in the fridge for about 30 minutes to firm up.
- Slice into spirals and serve with icing or a simple glaze.
Notes
These rolls can be frozen for later enjoyment. Ensure they are well-wrapped before freezing.
