Delicious no-bake vegan cinnamon rolls that are easy to make and perfect for any occasion.


Ingredients

  • 1 ½ cups rolled oats
  • 1 cup Medjool dates (pitted)
  • ¼ cup almond butter (or any nut/seed butter)
  • 2 tsp cinnamon
  • ⅓ cup maple syrup
  • ¼ cup shredded coconut (optional)
  • ½ cup raisins or chocolate chips (for filling)
  • 1 tablespoon vanilla extract

Instructions

  1. Blend the oats and Medjool dates in a high-speed blender until crumbly and sticky.
  2. Add the almond butter, maple syrup, cinnamon, and vanilla extract and blend until thick dough forms.
  3. Fold in shredded coconut and raisins or chocolate chips using a spatula.
  4. Shape the dough into logs on a piece of parchment paper.
  5. Chill in the fridge for about 30 minutes to firm up.
  6. Slice into spirals and serve with icing or a simple glaze.
