Description
A delicious recipe for Blackstone BBQ Chicken paired with sweet grilled corn, perfect for summer gatherings.
Ingredients
- Chicken Breasts (4 pieces)
- BBQ Sauce (1 cup)
- Corn on the Cob (2-4 pieces)
- Olive Oil (2 tablespoons)
- Garlic Powder (1 teaspoon)
- Salt and Pepper (to taste)
- Chopped Fresh Parsley (for garnish)
Instructions
- Start by marinating the chicken: In a bowl, mix the chicken breasts with 1/2 cup of BBQ sauce, olive oil, garlic powder, salt, and pepper. Allow it to marinate for at least 30 minutes.
- Preheat the Blackstone griddle: Heat your Blackstone griddle over medium-high heat for about 10 minutes.
- Place the chicken on the griddle: Drizzle a bit of oil on the griddle, then carefully lay down the marinated chicken breasts.
- Cook each side: Grill the chicken for about 6-7 minutes on each side until cooked to 165°F (75°C).
- Baste with BBQ sauce: Brush a little more BBQ sauce on top while it’s still on the griddle.
- Prepare the corn: Husk the corn and remove any silk; soak in water for about 10 minutes if desired.
- Grill the corn: Place the corn on the griddle alongside the chicken for about 10 minutes, turning every few minutes.
- Check the chicken: Once cooked, remove it from the griddle and let it rest for a few minutes.
- Serve: Slice the chicken, place it on a platter with the grilled corn, and garnish with fresh parsley.
Notes
For added flavor, consider using a spicy BBQ sauce or compound butter on the corn.
