Description

Ingredients

  • 2 lbs Chicken Breast
  • 1 of each color Bell Peppers (red, yellow, green)
  • 1 large Onion
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fajita Seasoning
  • 1 Lime
  • 8 small Tortillas (flour or corn)
  • Toppings (Sour cream, guacamole, pico de gallo, cheese)

Instructions

  1. Slice the chicken breasts into thin strips.
  2. Marinate the chicken with olive oil and fajita seasoning for at least 15 minutes.
  3. Slice the bell peppers and onion into thin strips.
  4. Preheat the Blackstone griddle to medium-high heat.
  5. Cook the marinated chicken until fully cooked, about 5–7 minutes.
  6. Remove the chicken and add sliced peppers and onions to the griddle, stir-frying for 3–4 minutes.
  7. Combine the chicken back with the veggies and squeeze lime juice over them.
  8. Warm the tortillas on the griddle for about a minute.
  9. Serve everything together for an interactive meal!

Notes

For added spice, consider including diced jalapeños or cayenne pepper in the seasoning. You can also try vegetarian options with portobello mushrooms.
