- 2 lbs Chicken Breast
- 1 of each color Bell Peppers (red, yellow, green)
- 1 large Onion
- 2 tablespoons Olive Oil
- 2 tablespoons Fajita Seasoning
- 1 Lime
- 8 small Tortillas (flour or corn)
- Toppings (Sour cream, guacamole, pico de gallo, cheese)
Instructions
- Slice the chicken breasts into thin strips.
- Marinate the chicken with olive oil and fajita seasoning for at least 15 minutes.
- Slice the bell peppers and onion into thin strips.
- Preheat the Blackstone griddle to medium-high heat.
- Cook the marinated chicken until fully cooked, about 5–7 minutes.
- Remove the chicken and add sliced peppers and onions to the griddle, stir-frying for 3–4 minutes.
- Combine the chicken back with the veggies and squeeze lime juice over them.
- Warm the tortillas on the griddle for about a minute.
- Serve everything together for an interactive meal!
Notes
For added spice, consider including diced jalapeños or cayenne pepper in the seasoning. You can also try vegetarian options with portobello mushrooms.
