  • 8 oz Lo Mein Noodles
  • 1 Red Bell Pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 2 Carrots, shredded or julienned
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 4 tbsp Soy Sauce
  • 2 tbsp Sesame Oil
  • 2 Eggs
  • 1 Onion, chopped
  • 1 tbsp Cornstarch (optional)

Instructions

  1. Prepare Your Ingredients: Slice your chicken into bite-sized pieces, chop your veggies, and boil the lo mein noodles according to package instructions. Drain and set aside.
  2. Cook the Chicken: Heat your Blackstone griddle to medium-high. Drizzle a bit of oil to coat the surface, then add the chicken. Cook for about 5–7 minutes until they are cooked through and golden brown. Remove and set aside.
  3. Sauté the Veggies: Add garlic and ginger to the griddle, cooking for about 30 seconds. Then add bell peppers and carrots, stir-frying for 3–5 minutes until tender.
  4. Coat it in Flavor: Add the cooked chicken back to the griddle, toss in the lo mein noodles with soy sauce and sesame oil, mixing for 2–3 minutes until well combined.
  5. Create the Sauce: For an extra touch, mix cornstarch with water and add to the griddle to thicken the sauce.
  6. Finish it Off: Scramble the eggs into the mix until fully cooked, then remove from heat and garnish with green onions.

Notes

Feel free to substitute chicken with tofu or shrimp for a different twist. Pair with crispy spring rolls or a cucumber salad for a complete meal.
