- 2 Chicken Breasts (or Thighs)
- 8 oz Lo Mein Noodles
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 Green Bell Pepper, sliced
- 2 Carrots, shredded or julienned
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 4 tbsp Soy Sauce
- 2 tbsp Sesame Oil
- 2 Eggs
- 1 Onion, chopped
- 1 tbsp Cornstarch (optional)
Instructions
- Prepare Your Ingredients: Slice your chicken into bite-sized pieces, chop your veggies, and boil the lo mein noodles according to package instructions. Drain and set aside.
- Cook the Chicken: Heat your Blackstone griddle to medium-high. Drizzle a bit of oil to coat the surface, then add the chicken. Cook for about 5–7 minutes until they are cooked through and golden brown. Remove and set aside.
- Sauté the Veggies: Add garlic and ginger to the griddle, cooking for about 30 seconds. Then add bell peppers and carrots, stir-frying for 3–5 minutes until tender.
- Coat it in Flavor: Add the cooked chicken back to the griddle, toss in the lo mein noodles with soy sauce and sesame oil, mixing for 2–3 minutes until well combined.
- Create the Sauce: For an extra touch, mix cornstarch with water and add to the griddle to thicken the sauce.
- Finish it Off: Scramble the eggs into the mix until fully cooked, then remove from heat and garnish with green onions.
Notes
Feel free to substitute chicken with tofu or shrimp for a different twist. Pair with crispy spring rolls or a cucumber salad for a complete meal.
