- 4 cups cooked rice (preferably day-old)
- 2–3 tablespoons vegetable oil
- 3 cloves garlic (minced)
- 1 medium onion (chopped)
- 1 cup carrots (diced)
- 1 cup frozen peas
- 1/4 cup soy sauce
- 2 eggs (beaten)
- Cooked protein (optional: chicken, shrimp, or tofu)
- Green onions (for garnish)
Instructions
- Preheat the Griddle: Preheat your Blackstone griddle to medium-high heat.
- Add the Aromatics: Add the vegetable oil to the hot griddle, then toss in the minced garlic and chopped onion. Sauté for about 2 minutes until fragrant.
- Cook the Veggies: Add the diced carrots and frozen peas, cooking for 3-4 minutes until carrots soften.
- Create Space: Push the veggies to the side, pour the beaten eggs onto the griddle, and scramble. Combine everything once eggs are cooked.
- Toss in the Rice: Add the cooked rice, breaking up clumps, and mix with veggies and eggs.
- Pour the Soy Sauce: Pour the soy sauce over the rice and mix it evenly.
- Incorporate Protein: If adding protein, toss it in and stir until heated through.
- Garnish: Sprinkle chopped green onions before serving.
