  • 23 tablespoons vegetable oil
  • 3 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 cup carrots (diced)
  • 1 cup frozen peas
  • 1/4 cup soy sauce
  • 2 eggs (beaten)
  • Cooked protein (optional: chicken, shrimp, or tofu)
  • Green onions (for garnish)

Instructions

  1. Preheat the Griddle: Preheat your Blackstone griddle to medium-high heat.
  2. Add the Aromatics: Add the vegetable oil to the hot griddle, then toss in the minced garlic and chopped onion. Sauté for about 2 minutes until fragrant.
  3. Cook the Veggies: Add the diced carrots and frozen peas, cooking for 3-4 minutes until carrots soften.
  4. Create Space: Push the veggies to the side, pour the beaten eggs onto the griddle, and scramble. Combine everything once eggs are cooked.
