- 1 cup Shredded Cheddar Cheese
- 1 cup Cooked Bacon (crumbled)
- 1/4 cup Green Onions (chopped)
- Sour Cream (for serving)

Instructions
- Prep the potatoes by rinsing them under cold water, then boiling in salted water for about 15 minutes until fork-tender.
- Drain the cooked potatoes and let sit in the colander for a minute.
- Heat the Blackstone griddle to medium heat and drizzle with olive oil.
- Grill the smashed potatoes for 4-5 minutes until golden and crispy, adding salt and pepper.
- Add shredded cheddar and crumbled bacon on top, covering with a lid to melt the cheese for 2-3 minutes.
- Garnish with chopped green onions and a dollop of sour cream, and sprinkle with paprika if desired.
