Creamy, cheesy, and utterly irresistible side dish perfect for any occasion, featuring warm, crispy smashed potatoes topped with gooey cheese, crunchy bacon, and fresh green onions.


Ingredients

  • 2 lbs Baby Potatoes
  • 4 tbsp Olive Oil
  • Sea Salt (to taste)
  • Black Pepper (to taste)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Cooked Bacon (crumbled)
  • 1/4 cup Green Onions (chopped)
  • Sour Cream (for serving)
  • Paprika (optional, for garnish)

Instructions

  1. Prep the potatoes by rinsing them under cold water, then boiling in salted water for about 15 minutes until fork-tender.
  2. Drain the cooked potatoes and let sit in the colander for a minute.
  3. Heat the Blackstone griddle to medium heat and drizzle with olive oil.
  4. Grill the smashed potatoes for 4-5 minutes until golden and crispy, adding salt and pepper.
  5. Add shredded cheddar and crumbled bacon on top, covering with a lid to melt the cheese for 2-3 minutes.
  6. Garnish with chopped green onions and a dollop of sour cream, and sprinkle with paprika if desired.
