- 4 Chicken Breasts (boneless and skinless)
- 2 tablespoons Olive Oil
- 4 cloves Garlic (minced)
- 1 cup Sun-Dried Tomatoes (chopped)
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese (grated)
- 1/2 cup Fresh Basil (chopped)
- Salt and Pepper (to taste)
- Red Pepper Flakes (optional)
Instructions
- Prep your chicken by patting it dry and seasoning with salt and pepper.
- Heat the Blackstone griddle over medium-high heat and add olive oil.
- Sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a plate and cover with foil.
- Sauté garlic in the griddle for 30 seconds, then add sun-dried tomatoes.
- Make the sauce by pouring chicken broth, scraping up bits, then adding heavy cream and parmesan.
- Return the chicken to the griddle, spooning sauce over it, and let it simmer for 5 minutes.
- Add fresh basil just before serving.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes.
Notes
For a lighter alternative, use boneless chicken thighs and reduce the heavy cream. Can also substitute chicken with vegetables for a vegetarian option.
