Description

Crumbly, golden oats meet juicy blueberries in this feel-good snack or dessert. These bars are lightly sweet, easy to make, and perfect for breakfast on the go, midday munchies, or a cozy treat with tea. Comfort and nutrition never tasted so good!


Ingredients

For the Crust & Crumble:

1 cup old-fashioned oats

¾ cup all-purpose flour (or gluten-free flour blend)

⅓ cup light brown sugar

¼ tsp baking soda

¼ tsp salt

½ tsp cinnamon (optional)

6 tbsp unsalted butter, melted (or coconut oil)

1 tsp vanilla extract

For the Blueberry Filling:

1 cup blueberries (fresh or frozen)

¼ cup granulated sugar

2 tsp cornstarch


Instructions

Preheat oven to 350°F (175°C) and line a small square baking dish with parchment paper.

In a bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.

Add melted butter and vanilla extract; mix until crumbly.

Press 2/3 of the mixture into the bottom of the dish.

In another bowl, toss blueberries with sugar and cornstarch.

Spread blueberry mixture evenly over the base.

Sprinkle remaining oat mixture on top.

Bake for 25–30 minutes until golden and bubbly.

Cool completely before slicing into bars.
