Description
Delicious bite-sized cookies inspired by the classic Boston Cream Pie, filled with custard and topped with rich chocolate ganache.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1 cup powdered sugar
- ½ cup heavy cream
- ½ cup semi-sweet chocolate chips
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, and a pinch of salt. Set aside.
- In a large mixing bowl, combine softened butter and granulated sugar. Mix until fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the dry mixture to the wet, mixing until just combined.
- Scoop spoonfuls of dough onto a parchment-lined baking sheet, leaving space between each.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- In a saucepan, combine heavy cream and powdered sugar over medium heat, stirring until thickened (about 5-7 minutes). Remove from heat and cool.
- Let cookies cool for 5 minutes on the baking sheet, then transfer to a wire rack.
- Fill each cookie with the cooled custard and top with another cookie.
- In a microwave-safe bowl, heat chocolate chips and milk until melted (about 30 seconds), stirring to achieve a smooth ganache.
- Drizzle chocolate ganache over the assembled cookies. Allow to set before serving.
Notes
For a gluten-free version, swap the all-purpose flour with a gluten-free blend. You can customize with nutty additions or flavored extracts.
