Description

Delicious bite-sized cookies inspired by the classic Boston Cream Pie, filled with custard and topped with rich chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • ½ cup heavy cream
  • ½ cup semi-sweet chocolate chips
  • 23 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and a pinch of salt. Set aside.
  3. In a large mixing bowl, combine softened butter and granulated sugar. Mix until fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry mixture to the wet, mixing until just combined.
  6. Scoop spoonfuls of dough onto a parchment-lined baking sheet, leaving space between each.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. In a saucepan, combine heavy cream and powdered sugar over medium heat, stirring until thickened (about 5-7 minutes). Remove from heat and cool.
  9. Let cookies cool for 5 minutes on the baking sheet, then transfer to a wire rack.
  10. Fill each cookie with the cooled custard and top with another cookie.
  11. In a microwave-safe bowl, heat chocolate chips and milk until melted (about 30 seconds), stirring to achieve a smooth ganache.
  12. Drizzle chocolate ganache over the assembled cookies. Allow to set before serving.

Notes

For a gluten-free version, swap the all-purpose flour with a gluten-free blend. You can customize with nutty additions or flavored extracts.
