- Large flour tortillas (10-inch)
- 4 large eggs
- 4 strips of bacon or 1 cup of sausage
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1 avocado, sliced
- 1/2 cup salsa
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Dice the bell peppers and onions, chop the bacon or sausage, and grate the cheese.
- Heat a splash of oil in a large skillet over medium heat. Add the diced bacon or sausage and cook until crispy and golden.
- Add the diced bell peppers and onions, cooking until they are soft (about 3-4 minutes).
- Whisk the eggs with salt and pepper. Pour over the cooked protein and veggies, stirring gently until the eggs are fluffy.
- Sprinkle cheese over the egg mixture and let it melt.
- Warm tortillas for about 20 seconds on each side. Place a generous amount of the egg mixture in each tortilla with avocado and salsa.
- Roll up the burritos, folding in the sides and tucking in the filling. Secure with a toothpick if needed.
- Serve with additional salsa and a dollop of sour cream if desired.
