Ingredients

  • Large flour tortillas (10-inch)
  • 4 large eggs
  • 4 strips of bacon or 1 cup of sausage
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 avocado, sliced
  • 1/2 cup salsa
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Dice the bell peppers and onions, chop the bacon or sausage, and grate the cheese.
  2. Heat a splash of oil in a large skillet over medium heat. Add the diced bacon or sausage and cook until crispy and golden.
  3. Add the diced bell peppers and onions, cooking until they are soft (about 3-4 minutes).
  4. Whisk the eggs with salt and pepper. Pour over the cooked protein and veggies, stirring gently until the eggs are fluffy.
  5. Sprinkle cheese over the egg mixture and let it melt.
  6. Warm tortillas for about 20 seconds on each side. Place a generous amount of the egg mixture in each tortilla with avocado and salsa.
  7. Roll up the burritos, folding in the sides and tucking in the filling. Secure with a toothpick if needed.
  8. Serve with additional salsa and a dollop of sour cream if desired.
