For the Granola Crust:
2 cups rolled oats
1/4 cup honey or maple syrup
1/4 cup coconut oil, melted
1/2 tsp vanilla extract
Pinch of salt
For the Filling:
1 cup Greek yogurt (plain or vanilla)
1 tbsp honey (optional, for added sweetness)
For the Topping:
Fresh berries (blackberries, raspberries, strawberries)
Kiwi slices
Coconut flakes
Drizzle of honey
Preheat oven to 350°F (175°C).
In a bowl, mix oats, honey, coconut oil, vanilla, and salt until well combined.
Press the mixture into greased muffin tins, shaping into tart shells.
Bake for 15–18 minutes or until golden brown. Let them cool completely.
Spoon Greek yogurt into each tart shell.
Top with fresh fruits, coconut flakes, and a light honey drizzle.
Serve immediately or refrigerate until ready to enjoy.
