Spicy, crispy, and seriously satisfying—these Buffalo Cauliflower Bites bring the heat with a kick of bold flavor. Roasted to perfection and served with cool blue cheese dressing, they’re finished with a fiery sprinkle of buffalo-seasoned pumpkin seeds for that addictive crunch.
Ingredients
1 head cauliflower, cut into florets
2 tbsp olive oil
½ cup buffalo sauce (like Frank’s RedHot)
¼ tsp garlic powder
Salt & pepper to taste
¼ cup Buffalo Roasted Pumpkin Seeds (see previous recipe)
Blue cheese or ranch dressing, for dipping
Optional: chopped green onions for garnish
Instructions
Preheat oven: Set to 425°F (220°C).
Toss & coat: In a large bowl, toss cauliflower with olive oil, buffalo sauce, garlic powder, salt, and pepper.
Roast: Spread on a parchment-lined baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and tender.
Top & serve: Transfer to a plate, drizzle with more buffalo sauce if desired, and sprinkle generously with buffalo pumpkin seeds.
Dip away: Serve hot with blue cheese or ranch dressing.
