Description

These stuffed peppers are filled with shredded chicken, spicy Buffalo sauce, and creamy cheese, making for a flavorful and hearty meal.


Ingredients

  • 4 large Bell Peppers
  • 2 cups Cooked Chicken, shredded
  • 1 cup Buffalo Sauce
  • 4 oz Cream Cheese
  • 1 cup Cheddar Cheese, shredded
  • 2 Green Onions, chopped
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes.
  3. Mix the Filling: In a large mixing bowl, combine the shredded chicken, Buffalo sauce, softened cream cheese, half the cheddar cheese, garlic powder, and green onions.
  4. Stuff the Peppers: Take generous spoonfuls of your filling and pack it into each bell pepper.
  5. Top with Cheese: Sprinkle the remaining cheddar cheese on top of each stuffed pepper.
  6. Bake: Cover with foil and bake for about 25 minutes, then remove the foil and bake for an additional 10-15 minutes.
  7. Serve and Enjoy: Let them cool for a few minutes before serving.

Notes

For a milder version, mix Buffalo sauce with ranch dressing. You can make these in advance and store in the fridge before baking.
