Ingredients
2 chicken breasts, cooked and diced
1 head cauliflower, cut into florets
1 tbsp olive oil
½ cup hot sauce (like Frank’s RedHot)
1 tbsp ranch seasoning
1 cup shredded mozzarella cheese
Salt & pepper to taste
Instructions
Preheat oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper. Roast for 20 minutes until lightly browned.
In a bowl, mix diced chicken, roasted cauliflower, hot sauce, and ranch seasoning.
Transfer to a baking dish and top with mozzarella.
Bake for 10–12 minutes until bubbly and golden.
