10 stalks celery, chopped
5 carrots, chopped
3 onions, chopped
2 green bell peppers, diced
1 large head of cabbage, chopped
1 (15 oz) can green beans, drained
2 quarts tomato juice
2 (16 oz) cans whole peeled tomatoes (with liquid)
1 (14 oz) can beef broth
Cold water (to cover veggies)
1 packet dry onion soup mix
Add all vegetables to a large soup pot.
Pour in tomato juice, canned tomatoes, beef broth, and just enough cold water to cover.
Stir in onion soup mix.
Bring to a boil, then reduce heat and simmer for 25 minutes or until veggies are tender.
Serve warm and enjoy!
