  • 1 lb. Fresh Crab Meat
  • 1 Red Bell Pepper, Chopped
  • 1 Cup Sweet Corn (Frozen or Fresh)
  • 1/2 Cup Red Onion, Diced
  • 1/4 Cup Fresh Parsley, Chopped
  • 1/2 Cup Mayonnaise
  • 2 tbsp. Dijon Mustard
  • 1 tbsp. Cajun Spice Mix
  • Salt and Pepper to Taste

Instructions

  1. Cook the pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook until al dente (7-9 minutes). Stir occasionally to prevent sticking.
  2. Prep the veggies: While the pasta cooks, chop the red bell pepper, onion, and parsley. Set aside in a mixing bowl.
  3. Drain and cool the pasta: Drain the pasta and rinse under cold water to stop cooking.
  4. Mix the dressing: In a bowl, combine mayonnaise, Dijon mustard, Cajun spice mix, salt, and pepper. Whisk until smooth.
  5. Combine all ingredients: In the bowl with the veggies, add pasta and crab meat. Gently fold in the dressing until well coated.
  6. Chill before serving: Cover and refrigerate for at least 30 minutes to meld flavors.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt or plant-based mayo. This salad can last up to 3 days in the fridge.
