- 8 oz. Pasta (Rotini or Shells)
- 1 lb. Fresh Crab Meat
- 1 Red Bell Pepper, Chopped
- 1 Cup Sweet Corn (Frozen or Fresh)
- 1/2 Cup Red Onion, Diced
- 1/4 Cup Fresh Parsley, Chopped
- 1/2 Cup Mayonnaise
- 2 tbsp. Dijon Mustard
- 1 tbsp. Cajun Spice Mix
- Salt and Pepper to Taste
Instructions
- Cook the pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook until al dente (7-9 minutes). Stir occasionally to prevent sticking.
- Prep the veggies: While the pasta cooks, chop the red bell pepper, onion, and parsley. Set aside in a mixing bowl.
- Drain and cool the pasta: Drain the pasta and rinse under cold water to stop cooking.
- Mix the dressing: In a bowl, combine mayonnaise, Dijon mustard, Cajun spice mix, salt, and pepper. Whisk until smooth.
- Combine all ingredients: In the bowl with the veggies, add pasta and crab meat. Gently fold in the dressing until well coated.
- Chill before serving: Cover and refrigerate for at least 30 minutes to meld flavors.
Notes
For a lighter version, substitute mayonnaise with Greek yogurt or plant-based mayo. This salad can last up to 3 days in the fridge.
