Description

Nutritious no-bake snacks that capture the delicious flavors of traditional carrot cake.


Ingredients

  • 1 cup rolled oats
  • ½ cup grated carrots
  • ½ cup nut butter (almond butter or peanut butter)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup walnuts or pecans, chopped
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prep your ingredients by measuring them out and getting them ready.
  2. Mix the dry ingredients in a large mixing bowl: rolled oats, grated carrots, chopped walnuts/pecans, ground cinnamon, and a pinch of salt.
  3. Incorporate the nut butter, honey (or maple syrup), and vanilla extract in a separate bowl until creamy.
  4. Combine the wet and dry mixtures and mix well until sticky.
  5. Form the mixture into balls using a tablespoon, rolling them between your palms.
  6. Chill the balls in the fridge for at least 30 minutes.
  7. Enjoy! Store in an airtight container in the fridge for a week.

Notes
