Ingredients

- ½ cup grated carrots
- ½ cup nut butter (almond butter or peanut butter)
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ¼ cup walnuts or pecans, chopped
- 1 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Prep your ingredients by measuring them out and getting them ready.
- Mix the dry ingredients in a large mixing bowl: rolled oats, grated carrots, chopped walnuts/pecans, ground cinnamon, and a pinch of salt.
- Incorporate the nut butter, honey (or maple syrup), and vanilla extract in a separate bowl until creamy.
- Combine the wet and dry mixtures and mix well until sticky.
- Form the mixture into balls using a tablespoon, rolling them between your palms.
- Chill the balls in the fridge for at least 30 minutes.
- Enjoy! Store in an airtight container in the fridge for a week.
