These Cheesy Beef and Cheese Enchiladas are comfort food at its best, featuring flavorful ground beef, soft tortillas, and melty cheese wrapped in a rich enchilada sauce.

- 1 lb (450 g) ground beef
- 1 medium yellow onion, finely chopped
- 2–3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 2 cups (about 480 ml) enchilada sauce
- 8–10 flour or corn tortillas (6–8 inch)
- 2 cups shredded Mexican blend cheese
- 1/4 cup chopped cilantro (optional)
- 1/2 cup sour cream or Mexican crema (for serving)
- 1/4 cup diced green onions or chopped white onion (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Warm tortillas in a dry skillet or wrapped in foil.
- Heat a large skillet over medium-high heat. Add the ground beef and break it up with a spoon. Cook until mostly browned, about 5–7 minutes.
- Add the chopped onion to the skillet, sauté until translucent, about 3–4 minutes. Add the garlic and cook until fragrant, about 30–60 seconds.
- Sprinkle in chili powder, cumin, smoked paprika, oregano, and black pepper; stir to coat the meat and toast the spices for 30–60 seconds.
- Taste the filling and adjust seasoning as needed to ensure bold flavor.
- Spoon about 1/4 to 1/3 cup of the beef mixture down the center of a warmed tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the dish. Repeat until filled.
- Pour enchilada sauce evenly over the rolls and scatter remaining cheese on top. Broil for 2–3 minutes for an extra cheesy crust if desired.
- Bake covered with foil for 15 minutes, then remove foil and bake another 8–10 minutes until cheese is bubbly.
- Let the enchiladas rest for 5 minutes, then garnish with cilantro, green onions, and sour cream.
- Serve and enjoy, pairing with rice, beans, or salad.
