- 1 lb (450 g) ground beef
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika (optional)
- Salt and black pepper, to taste
- 1 (15 oz) can red enchilada sauce
- 8–10 flour or corn tortillas (6–8-inch)
- 2 cups shredded cheddar or Mexican blend cheese
- 2 tbsp vegetable oil or butter
- Fresh cilantro, chopped (for garnish)
- Optional toppings: sliced green onions, sour cream, diced avocado, lime wedges, pickled jalapeños
Instructions
- Prep your mise en place by preheating the oven to 375°F (190°C) and laying out the ingredients.
- Heat a large skillet over medium-high heat, add ground beef, and brown it.
- Add the chopped onion and sauté until softened, then stir in garlic and spices.
- Pour in about 1/2 cup of enchilada sauce and stir to combine, simmering for a few minutes.
- Lightly grease a baking dish and spread a thin layer of enchilada sauce on the bottom.
- Lay a warm tortilla on your work surface, fill with beef mixture and cheese, then roll and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Bake uncovered for 18–22 minutes until the cheese is bubbly and golden.
- Let the enchiladas rest for 5 minutes and garnish with cilantro and optional toppings before serving.
Notes
Warm tortillas to prevent cracking. Feel free to customize toppings according to your taste.
