2 cups fresh or thawed corn kernels
1 cup shredded sharp cheddar or mozzarella
1 cup all-purpose flour
1 tsp baking powder
2 large eggs
¼ cup finely chopped green onions
Instructions
In a large bowl, mix corn, cheese, flour, baking powder, eggs, and green onions until well combined.
Heat oil in a skillet over medium heat.
Drop spoonfuls of batter into pan and flatten slightly.
Cook 2–3 mins per side until golden brown.
Drain on paper towels. Serve warm.
