A comforting, cheesy casserole made with ground beef, potatoes, and melty cheese that’s perfect for weeknight dinners.

- 1 lb ground beef (80/20)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3–4 medium russet potatoes (about 2–2.5 lbs), thinly sliced or diced
- 1 cup frozen peas and carrots (optional)
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk (whole or 2%)
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 2 cups shredded sharp cheddar cheese, divided
- 1/2 cup grated Parmesan (optional)
- 2 tablespoons butter
- 1 cup crushed potato chips or breadcrumbs for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Brown the ground beef in a large skillet over medium-high heat, breaking it up until no longer pink (about 6–8 minutes). Drain excess fat.
- Sauté the diced onion in the same skillet until translucent, about 4–5 minutes, then add the minced garlic for the last 30–45 seconds.
- Combine the cream of mushroom soup, milk, and Worcestershire sauce in a bowl. Adjust seasoning as needed and stir in half of the shredded cheddar.
- Par-cook potatoes by either thinly slicing and boiling for 5 minutes or dicing them small for easier cooking.
- Assemble the casserole by layering half the potatoes in the baking dish, followed by half the beef mixture, and half the sauce with a handful of cheddar.
- Repeat the layers with the remaining ingredients. Finish with Parmesan and crushed chips.
- Cover with foil and bake for 35–45 minutes, checking for tenderness.
- Brown the top by removing the foil, adding remaining cheddar, and broiling for 2–5 minutes until bubbly and golden.
- Rest for 10 minutes before serving, garnishing with chopped parsley or chives.
Notes
For extra flavor, stir a spoonful of Dijon mustard into the sauce. Leftovers reheat beautifully.
