A deliciously comforting and health-conscious twist on classic Chicken Parmesan using zucchini as a low-carb vessel.
Ingredients

- 4 medium Zucchini
- 2 cups Cooked Chicken Breast, shredded
- 1 cup Marinara Sauce
- 1 ½ cups Mozzarella Cheese, shredded
- ½ cup Parmesan Cheese, shredded
- 1 tablespoon Italian Seasoning
- Salt and Pepper, to taste
- 1 tablespoon Olive Oil
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the zucchini by slicing in half lengthwise and scooping out the seeds.
- Sprinkle salt on the zucchini flesh and set aside.
- Mix together the chicken, marinara, mozzarella, half of the Parmesan, and Italian seasoning in a bowl.
- Fill each zucchini boat with the chicken mixture.
- Top with remaining Parmesan cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil or parsley before serving.
Notes
Great served with a side salad or roasted veggies. Add extra marinara for dipping.
