A comforting one-pan dish featuring juicy chicken, crispy bacon, creamy ranch dressing, and vibrant veggies.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, diced
  • 4 slices bacon, chopped
  • 1 cup mixed bell peppers (red, green, yellow), diced
  • 1 small onion, diced
  • 2 cups baby spinach
  • 1 cup ranch dressing
  • Salt and pepper to taste
  • Optional: Grated cheese for topping

Instructions

  1. Prep Your Ingredients: Organize by dicing the chicken, chopping the bell peppers, and dicing the onion.
  2. Cook the Bacon: In a skillet over medium heat, add the bacon until crispy, about 5-7 minutes.
  3. Sauté the Chicken: In the same skillet, add chicken, season with salt and pepper, and cook for 5-6 minutes until cooked through.
  4. Add the Veggies: Toss in onion and bell peppers, sauté for about 4 minutes until softened.
  5. Add Spinach and Bacon: Stir in spinach and bacon, cook for 2-3 minutes until spinach wilts.
  6. Pour in the Ranch Dressing: Coat the mixture with ranch dressing, let simmer for 3-4 minutes.
  7. Serve it Up: Plate or serve directly from the skillet, and top with optional cheese if desired.

Notes

For extra flavor, serve with a side salad or crusty bread. Can be served over rice or pasta for a full meal.
