This chilled pasta salad is a tangy dream for every pickle fanatic. Juicy chicken, crunchy dill pickles, and a creamy dressing all twirl together in a bowl of cold pasta perfection. Ingredients
3 cups cooked pasta (rotini or shells)
2 cups shredded cooked chicken
1 cup chopped dill pickles
½ cup pickle juice
¾ cup mayonnaise
½ cup sour cream
1 tbsp Dijon mustard
½ tsp garlic powder
Salt & pepper to taste
2 tbsp fresh dill, chopped (plus extra for garnish)
Optional: chopped celery or red onion for crunch
Instructions
Cook pasta until al dente, then rinse with cold water and drain.
In a large bowl, whisk together mayo, sour cream, pickle juice, Dijon, garlic powder, salt, and pepper.
Stir in cooked pasta, chicken, pickles, and fresh dill. Mix until evenly coated.
Chill in the fridge for at least 1 hour to let flavors meld.
Garnish with extra dill or pickle slices before serving.
