Description

A refreshing and flavorful salad featuring grilled marinated chicken, crisp greens, and a zesty lime dressing.


Ingredients

  • 23 pieces Chicken Breasts
  • 23 Chipotle Peppers in Adobo Sauce
  • Juice of 2 Fresh Limes
  • 3 tablespoons Olive Oil
  • 1 tablespoon Honey or Agave Nectar
  • 1 cup Cherry Tomatoes, halved
  • 1/2 Red Onion, thinly sliced
  • 1 cup Corn, cooked
  • 1 can Black Beans, drained and rinsed
  • 4 cups Mixed Greens
  • 1 Avocado, sliced

Instructions

  1. In a large bowl, combine lime juice, minced chipotle peppers, olive oil, and honey. Whisk until combined. Add chicken and marinate for at least 30 minutes.
  2. Grill marinated chicken over medium-high heat for 6-7 minutes per side or until cooked through.
  3. Let the chicken rest for 5 minutes before slicing.
  4. Prepare dressing with remaining marinade, additional lime juice, and olive oil.
  5. In a large bowl, layer mixed greens and top with cherry tomatoes, red onions, corn, black beans, and sliced chicken.
  6. Drizzle dressing over salad and toss gently.
  7. Top with avocado slices and serve.
  8. Taste and adjust dressing or seasoning as needed.

Notes

Serve with tortilla chips or roasted sweet potatoes for a heartier meal. Add fresh cilantro for garnish.
