Ingredients
1 1/2 cups all-purpose flour
3 1/2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1 1/4 cups milk
1 egg
3 tbsp unsalted butter, melted
1 tsp vanilla extract
1/2 cup mini chocolate chips (plus more for topping)
Butter and maple syrup for serving
Instructions
In a large bowl, whisk together flour, baking powder, salt, and sugar.
In another bowl, whisk milk, egg, melted butter, and vanilla.
Pour wet ingredients into dry ingredients and stir until just combined — don’t overmix!
Gently fold in chocolate chips.
Heat a non-stick pan or griddle over medium heat and lightly grease.
Pour 1/4 cup batter per pancake onto the hot surface.
Cook until bubbles form on top and edges look set, then flip and cook another 1–2 minutes.
Serve warm with butter, syrup, and extra chips on top!
