Ingredients

Chorizo sausage

Eggs, scrambled

Hash browns (pre-cooked or fresh)

Shredded cheese

Large flour tortillas

Crispy tostadas or tortilla chips (for the crunch)


Instructions

Cook chorizo on the griddle until browned. Set aside.

Scramble eggs and cook hash browns until golden.

On a large tortilla, layer eggs, chorizo, hash browns, and cheese over a tostada.

Fold the tortilla over the center, creating a sealed wrap.

Sear folded side down first on the griddle until golden, then flip to crisp the other side.
