For the Chicken:
1 lb chicken breast, cut into strips
2 tbsp olive oil
2 tbsp honey
Juice and zest of 1 lime
2 tbsp fresh cilantro, chopped
Salt and pepper to taste
For the Peach Salsa:
2 ripe peaches, diced
1/4 red onion, finely chopped
1 small jalapeño, seeded and diced (optional)
Juice of 1 lime
2 tbsp cilantro, chopped
Salt to taste
For the Bowl:
2 cups cooked rice (white, brown, or jasmine)
Optional toppings: avocado, extra lime wedges, hot sauce
In a bowl, mix chicken with olive oil, honey, lime juice, zest, cilantro, salt, and pepper. Marinate while you prepare the salsa.
Combine all peach salsa ingredients in a bowl and let sit to develop flavor.
