Ingredients

  • 1 lb Flank or Skirt Steak
  • 1 cup Rice (white, brown, or jasmine)
  • 1/2 cup Fresh Cilantro, chopped
  • 2 Fresh Limes, juiced and zested
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste
  • Toppings: Avocado, pico de gallo, black beans, corn, cheese, or sour cream

Instructions

  1. Create the Marinade: In a medium bowl, mix together the lime juice, lime zest, minced garlic, chopped cilantro, olive oil, salt, and pepper. Whisk until combined.
  2. Marinate the Steak: Place the steak in a resealable bag or shallow dish, pour the marinade over it, seal, and let it soak in for at least 30 minutes.
  3. Cook the Rice: Prepare the rice according to package instructions, adding a pinch of salt and a squeeze of lime juice for flavor.
  4. Preheat the Grill: Heat your grill or a grill pan over medium-high heat.
  5. Cook the Steak: Remove the steak from the marinade, letting excess drip off, and place it onto the hot grill. Cook for about 4-6 minutes on each side.
  6. Rest the Steak: Once cooked, transfer it to a cutting board and let it rest for 5-10 minutes.
  7. Slice the Steak: After resting, slice the steak against the grain into thin strips.
