Ingredients
2 cups (480g) cottage cheese (whole milk, small curds recommended)
2 cups (180g) rolled oats
1 cup (240ml) unsweetened applesauce or 1 medium sweet apple, finely grated (like Fuji or Honeycrisp)
2 large eggs
1 tsp (3g) ground cinnamon
2 tbsp (42g) honey or maple syrup (optional, for a touch of sweetness)
1 tsp (4g) baking powder
¼ tsp salt
Optional twists:
Add ½ tsp vanilla extract for warmth
Fold in ¼ cup raisins, chopped walnuts, or mini dark chocolate chips
Sprinkle tops with cinnamon-sugar or crushed almonds before baking
Instructions
Preheat oven to 350°F (175°C). Line a mini muffin tin or grease lightly.
Blend or mix: In a bowl, combine all ingredients. Mix well by hand or pulse in a blender/food processor for smoother texture.
Portion: Fill muffin cups nearly full.
Bake for 18–22 minutes until set and slightly golden. Let cool before removing.
