Ingredients

  • 3 Bell Peppers (Red, Yellow, and Green)
  • 2 Zucchini
  • 1 Eggplant
  • 1 cup Cherry Tomatoes
  • 1 Red Onion
  • 4 cloves Garlic (Fresh & Minced)
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • Salt to taste
  • Pepper to taste
  • Optional: Feta Cheese
  • Optional: Balsamic Glaze

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and prepare the vegetables: chop bell peppers, slice zucchini, dice eggplant, and halve cherry tomatoes.
  3. Slice the red onion into thick wedges.
  4. Toss all chopped vegetables in a large bowl with minced garlic and olive oil.
  5. Season the mixture with dried oregano, thyme, salt, and pepper.
  6. Spread the seasoned veggies in a single layer on a baking sheet.
  7. Roast for about 25-30 minutes, stirring halfway through.
  8. Finish with feta cheese and balsamic glaze before serving.
  9. Serve warm or at room temperature, optionally topping with fresh herbs.
