Description

A comforting and nostalgic dish that wraps you in creamy bliss, perfect for chilly evenings or as a delightful dessert.


Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 large egg (optional)
  • A pinch of salt
  • Cinnamon sticks (for garnish, optional)

Instructions

  1. Rinse the Arborio rice under cold water until the water runs clear.
  2. Combine the rinsed rice and 1 cup of water in a medium saucepan. Bring it to a gentle boil, then reduce to a simmer and cover.
  3. Cook for about 10–12 minutes until the water has been absorbed.
  4. Add 4 cups of whole milk, ¾ cup of sugar, and a pinch of salt to the saucepan. Stir well to combine.
  5. Place the saucepan back on the stove over medium heat, stirring frequently to prevent sticking.
  6. Allow the mixture to come to a gentle simmer, then reduce the heat to low and cook for about 20-30 minutes, stirring regularly.
  7. Sprinkle in the vanilla extract and ground cinnamon, and taste to adjust sweetness or spice.
  8. Beat the egg in a small bowl. If using, temper the egg with a scoop of warm pudding and stir it back into the pot.
  9. Remove from heat and pour the pudding into serving bowls or a dish. Chill or serve warm.

Notes

Store leftovers in the fridge for up to 5 days. Stir before serving and add a splash of milk if it thickens too much.
