- 1 cup Arborio rice
- 4 cups whole milk
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1 large egg (optional)
- A pinch of salt
- Cinnamon sticks (for garnish, optional)
Instructions
- Rinse the Arborio rice under cold water until the water runs clear.
- Combine the rinsed rice and 1 cup of water in a medium saucepan. Bring it to a gentle boil, then reduce to a simmer and cover.
- Cook for about 10–12 minutes until the water has been absorbed.
- Add 4 cups of whole milk, ¾ cup of sugar, and a pinch of salt to the saucepan. Stir well to combine.
- Place the saucepan back on the stove over medium heat, stirring frequently to prevent sticking.
- Allow the mixture to come to a gentle simmer, then reduce the heat to low and cook for about 20-30 minutes, stirring regularly.
- Sprinkle in the vanilla extract and ground cinnamon, and taste to adjust sweetness or spice.
- Beat the egg in a small bowl. If using, temper the egg with a scoop of warm pudding and stir it back into the pot.
- Remove from heat and pour the pudding into serving bowls or a dish. Chill or serve warm.
Notes
Store leftovers in the fridge for up to 5 days. Stir before serving and add a splash of milk if it thickens too much.
