For the Cookie Dough:
¾ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1½ tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
For the Crumb Topping:
¼ cup all-purpose flour
¼ cup brown sugar
2 tbsp butter, melted
½ tsp cinnamon
For the Glaze:
½ cup powdered sugar
1–2 tbsp milk
¼ tsp vanilla extract
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, mix well.
In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients.
In a small bowl, combine crumb topping ingredients until crumbly.
Scoop cookie dough onto baking sheet (about 1½ tbsp per cookie). Slightly flatten each one and sprinkle crumb topping on top.
Bake for 10–12 minutes or until edges are lightly golden. Cool completely.
Mix glaze ingredients and drizzle over cooled cookies.
