Ingredients
½ lb pasta (cavatappi or your favorite shape)
1 large lemon (zest + juice)
¼ cup extra virgin olive oil
1½ cups grilled corn kernels (about 2–3 ears)
2 cups cherry tomatoes, halved
1 cup fresh cilantro, chopped
Kosher salt & freshly cracked black pepper, to taste
Instructions
Cook pasta according to package directions. Drain and let cool slightly.
In a large bowl, whisk together lemon juice, zest, olive oil, salt, and pepper.
Add cooled pasta, grilled corn, tomatoes, and chopped cilantro to the bowl.
Toss everything gently to coat.
Chill before serving, or serve slightly warm for extra flavor.
