- 4 cups fresh corn kernels (or 2 cans of sweet corn)
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers (any color), diced
- 1/2 red onion, minced
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon chili powder (optional)
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Prepare the Corn: If using fresh kernels, boil for 3-5 minutes or grill until tender. Rinse and drain canned corn.
- Chop and Mix: Dice bell peppers, halve cherry tomatoes, and mince red onion.
- Create the Dressing: In a bowl, mix mayonnaise, apple cider vinegar, garlic powder, and chili powder. Season with salt and pepper.
- Combine Ingredients: Add corn and veggies to the dressing and fold gently.
- Chill and Serve: Cover and chill in the fridge for 30 minutes to an hour.
- Garnish and Enjoy: Sprinkle with fresh cilantro before serving.
