  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder (optional)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare the Corn: If using fresh kernels, boil for 3-5 minutes or grill until tender. Rinse and drain canned corn.
  2. Chop and Mix: Dice bell peppers, halve cherry tomatoes, and mince red onion.
  3. Create the Dressing: In a bowl, mix mayonnaise, apple cider vinegar, garlic powder, and chili powder. Season with salt and pepper.
  4. Combine Ingredients: Add corn and veggies to the dressing and fold gently.
  5. Chill and Serve: Cover and chill in the fridge for 30 minutes to an hour.
