Ingredients
1 baguette, sliced into ½-inch rounds
Olive oil, for brushing
8 oz wheel of brie cheese, sliced
1½ cups fresh cranberries
2 tablespoons brown sugar
1 tablespoon balsamic vinegar
1 teaspoon chopped fresh rosemary
Fresh thyme sprigs, for garnish
Instructions
Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast for 5–7 minutes, until golden.
On a separate pan, combine cranberries, sugar, balsamic vinegar, and rosemary. Roast for 15–20 minutes, stirring halfway, until the berries burst and the mixture is thick and glossy.
Top each crostini with a slice of brie. Return to oven for 2–3 minutes, just until the cheese begins to melt.
Spoon warm cranberry mixture over the brie. Garnish with fresh thyme.
Serve immediately while warm and gooey.
