These Cream Cheese & Bacon Stuffed Mini Peppers are the ultimate keto snack, combining creamy cheese and crispy bacon for a mouth-watering appetizer.

  • 12 Mini Sweet Peppers
  • 8 oz Cream Cheese, softened
  • 6 slices Cooked Bacon, chopped
  • 1 tsp Garlic Powder
  • 2 Green Onions (Scallions), chopped
  • 1/2 cup Shredded Cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the mini sweet peppers by rinsing, drying, slicing in half lengthwise, and scooping out the seeds.
  3. Make the filling by combining softened cream cheese, cooked bacon, garlic powder, and chopped green onions in a mixing bowl.
  4. Stuff each pepper half with the cream cheese mixture.
  5. Place the stuffed peppers cut side up on a lined baking sheet.
  6. Add shredded cheese on top if using.
  7. Bake for about 20-25 minutes, until the peppers soften and the filling is warm and bubbly.
