- 12 Mini Sweet Peppers
- 8 oz Cream Cheese, softened
- 6 slices Cooked Bacon, chopped
- 1 tsp Garlic Powder
- 2 Green Onions (Scallions), chopped
- 1/2 cup Shredded Cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the mini sweet peppers by rinsing, drying, slicing in half lengthwise, and scooping out the seeds.
- Make the filling by combining softened cream cheese, cooked bacon, garlic powder, and chopped green onions in a mixing bowl.
- Stuff each pepper half with the cream cheese mixture.
- Place the stuffed peppers cut side up on a lined baking sheet.
- Add shredded cheese on top if using.
- Bake for about 20-25 minutes, until the peppers soften and the filling is warm and bubbly.
- Garnish with balsamic glaze or fresh herbs if desired, then serve.
