- 4 cups mixed vegetables (broccoli, carrots, bell peppers, or green beans)
- 1 cup grated cheese (cheddar or cheese of choice)
- 1 cup heavy cream
- 1 tablespoon butter (or olive oil for dairy-free)
- 2 cloves minced garlic
- 1 tablespoon all-purpose flour (or gluten-free flour)
- Salt and pepper to taste
- Optional toppings: breadcrumbs or additional cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and chop the mixed vegetables into bite-sized pieces, steaming tougher veggies for 3-4 minutes if necessary.
- Melt the butter in a medium saucepan, add minced garlic, and sauté for about a minute. Whisk in flour and cook for another minute.
- Pour in the heavy cream while whisking continuously until smooth and slightly thickened, about 2-3 minutes.
- Stir in the grated cheese until melted, seasoning with salt and pepper.
- In a greased baking dish, combine the vegetables with the cheese sauce.
- If desired, sprinkle breadcrumbs or additional cheese on top.
- Bake for 25-30 minutes, until bubbly and golden brown.
- Let cool for a few minutes before serving.
