  • 1 cup grated cheese (cheddar or cheese of choice)
  • 1 cup heavy cream
  • 1 tablespoon butter (or olive oil for dairy-free)
  • 2 cloves minced garlic
  • 1 tablespoon all-purpose flour (or gluten-free flour)
  • Salt and pepper to taste
  • Optional toppings: breadcrumbs or additional cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and chop the mixed vegetables into bite-sized pieces, steaming tougher veggies for 3-4 minutes if necessary.
  3. Melt the butter in a medium saucepan, add minced garlic, and sauté for about a minute. Whisk in flour and cook for another minute.
  4. Pour in the heavy cream while whisking continuously until smooth and slightly thickened, about 2-3 minutes.
  5. Stir in the grated cheese until melted, seasoning with salt and pepper.
  6. In a greased baking dish, combine the vegetables with the cheese sauce.
  7. If desired, sprinkle breadcrumbs or additional cheese on top.
  8. Bake for 25-30 minutes, until bubbly and golden brown.
  9. Let cool for a few minutes before serving.
