- 2 large carrots
- ½ cup mayonnaise
- ¼ cup Greek yogurt

Instructions
- Prep the Veggies: Wash the cucumber and carrots thoroughly. Slice the cucumber into thin slices and the carrots into thin rounds or grate them.
- Make the Dressing: In a mixing bowl, combine mayonnaise, Greek yogurt, apple cider vinegar, and honey. Whisk until smooth.
- Combine the dressing with the cucumber and carrots to ensure they’re well-coated.
- Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes
