- 12 ounces dried fettuccine
- 1 pound ground beef (80/20)
- 2 tablespoons olive oil
- 1 medium yellow onion, finely diced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 4 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1 (28-ounce) can crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup whole milk or heavy cream
- 4 ounces cream cheese, room temperature
- 1/2 cup freshly grated Parmesan, plus more to serve
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, chopped, for garnish
Instructions
- Prep everything before you start by chopping the onion, carrot, celery, and garlic, and measuring your liquids.
- Brown the meat for flavor in a skillet over medium-high heat until well browned.
- Build the soffritto by adding diced onion, carrot, and celery, cooking until softened.
- Add garlic and tomato paste, cooking for 1–2 minutes until fragrant.
- Deglaze with wine, scraping up brown bits from the pan, and let reduce.
- Add crushed tomatoes, oregano, bay leaf, and red pepper flakes, then simmer for 25–40 minutes.
- Cook the fettuccine in salted boiling water and reserve some pasta water.
- Finish the sauce by stirring in milk or cream, cream cheese, and Parmesan until smooth.
- Combine the drained fettuccine with sauce, tossing to coat.
- Rest and garnish with basil or parsley and extra Parmesan before serving.
Notes
This dish reheats well; gently warm leftovers with a splash of water or milk to loosen the sauce.
